Chef Harada’s message

Sincerita is the Italian word for ‘sincerity’.

The climate of the Yamagata-Okitama Valley, with its overwhelming difference in temperature, and the bounty of the adjacent mountains consisting of virgin beech forests, are promised and nurtured by the culinary traditions of the people of this region.

Sincerita is a place where, in this rich land, we pursue the ‘truth’ of ingredients, cook and challenge ourselves to create new dishes on a daily basis.

It would be my pleasure to welcom you to enjoy my cuisine while having a comfortable relaxed time.

The Magic Basin,
Okitama Basin

The Okitama Basin surrounded by 2,000m class mountains all around, When the wind passes over the high mountains, it becomes dry due to the foehn phenomenon.

The wind blows down into the basin at an altitude of 250m.
Because it is a basin, the wind stays.

Dry air warms and cools easily.
For example, on a summer day,the temperature rises to 35 degrees during the day,In the middle of the night, the temperature drops to 20 degrees at dawn.

This 15 degree temperature difference makes everything delicious.
Vegetables, fruits, and Yonezawa beef.

Just as humans need on and off, plants need the energy of the sun during the day.
I want to rest and ripen at night. And sweeten.
