Our LOGO

This OSTERIA SINCERITA logo signature is handwritten by Chef Harada.
It has been proofread more than 100 times, down to the beauty of the curves and the flowing fineness of the lines.

We implied 3 meanings in our logo.

The first one is the mountains of the Okitama valley, the very reason of flavour and aroma of ingredients given by.

The difference in daily temperatures gives reasons why this place is known as the 'magic valley, the miracle valley'.

The Okitama Valley is surrounded by some of Japanese 100 most famous mountains, all are over 2,000m altitude. When the wind comes over the high mountains, it becomes dry due to the so-called foehn phenomenon.

Dry winds warm up and cool down easily. In summer, the temperature rises to 35C during the day, but drops to 20C at night and in the morning..

This daily temperature difference of 15C makes vegetables, fruit and even Yonezawa beef taste better.

Vegetables, just same as human beings, need an ‘on and off cycle’ to ripen and create rich flavour. At night and in the morning, when the temperature is down to 20C, ripeness and sugar content increase.

The second is beef, the best beef in the world, Yonezawa beef.
Chef Harada's vision is not of a docile cow, but a courageous bull.Overlap this with the image of Chef Harada, who has carried a Michelin star from Niigata on his back, aiming for the next Michelin star.

Yonezawa beef, raised to the strictest standards in the world. Only heifers, with a long growing period of more than 32 months. Raised to the strictest standards of any beef brand in the world.

The third is being born in the year of the Ox, Chef Makoto Harada's zodiac sign. Now, whether chef ‘Makocchan’ was born in 1997, 1985 or 1973 is left to your imagination.

OSTERIA SINCERITA and Yamagata The Takinami often visit and dine at Michelin star rated restaurants for training purpose.

In 2022, a total number of 69 staffs went to a14 listed restaurants.
Multiplying the number of stars by the number of people who went gives total of 125 star rated Michelin restaurants.

In 2023, 33 staffs went to experience 6 restaurants, reaching to the number of 57 stars.

Check-in at OSTERIA SINCERITA takes 2 h 30 min from Tokyo station.

Near to the Tokyo metropolitan area... the Okihama Valley is near.

Using the Yamagata Shinkansen, directly from Tokyo Station to Akayu Station in 2 h 20 min. Plus from Akayu Station to the inn is only 5 minutes, 2 km. Total time is 2 h 30 min.

Direct without transfers, and a good nap on the Shinkansen on your way home.
